Winemaking
Our Alvear Fino is aged in a biological way under a clear layer that the yeast creates on top of the wine, known as the velo de flor, that prevents the wine from oxidation and gives it its characteristic aroma and flavour. Our finos don’t need to be fortified as we reach the 15ºC alcohol through fermentation with the Pedro Ximenez must.
Aging
Criaderas and solera system, traditional method involving rows of casks of american oak under a clear layer of yeast know as the “Velo de flor”. Aging at least 5 years.
Comments
Pale straw in color. The Nose possesses fresh, yeasty, crusty-bread qualities with hints of salty almonds. The palate is clean and tangy with a refreshing finish and a softness which makes it delightfully easy to drink. Alvear Fino is aged in a biological way under a clear layer that the yeast creates on top of the wine, known as the 'velo en flor', that prevents the wine from oxidation and gives it its characteristic aroma and flavor. Fino doesn’t need to be fortified as it reaches the 15ºC alcohol through fermentation with the Pedro Ximenez must. Pale olive green hues. Slightly pungent, tangy salty almonds aroma, dry and easy to drink.
