Alvear produces its entry level wines from a combination of estate (25%) and leased (75%) vineyards planted in the Sierra de Montilla de Calidad Superior and flatlands in the foothills of the Sierra.

Viticulture

Bush-trained and trellised vines, farmed completely sustainably without organic certification, but avoiding all use of harmful fungicides, pesticides, herbicides, fertilizers, and irrigation.

Soils

Albariza (in the Sierra de Montilla) and Arenas Rojas (in the heart of the DO).

Climate

Semi-Continential Mediterranean. Extremely high temperatures and irregular rainfall from year to year.

Winemaking

Alvear Pedro Ximénez is the winery’s most entry-level PX sweet wine. The grapes, which are harvested green, are sun dried on straw mats for a week before being pressed in a traditional olive oil press. The incredibly sweet must decants in concrete tinajas, and is fortified up to 16% ABV.

Aging

Alvear Pedro Ximénez is aged in American oak butts for two years in the system of soleras & criaderas.

Alvear Pedro Ximénez is the family's most entry level and approachable PX sweet wine. Like their other PX sweet wines, it is produced from sun-raisined grapes that are pressed into an incredibly sweet must, which is fortified in tinajas and decants for a year to settle sediment and integrate the fortification spirits. Before bottling, the wine briefly (average two years) passes through the system of soleras & criaderas.
