Sustainable dry farmed viticulture. High density trellises without irrigation nor harmful fungicides, herbicides, pesticides, or chemically synthesized fertilizers. Hand harvested.
Extremely sandy soils intermixed with small pieces of pure limestone. The surface (30cm.) is intermixed with red clay.
Grapes are hand harvested and cold soaked soon after arriving at the winery. Temperature controlled fermentation with neutral yeast in stainless steel.
The wine is bottled young after a few months in stainless steel to preserve freshness.
Quadrum White is a blend of 70% Verdejo and 30% Sauvignon Blanc. The region of La Mancha offers ideal growing conditions with a hot and dry climate, sandy soils, and high elevation. Verdejo is Spain's most important indigenous aromatic white varietal. With slightly different harvest times, these two acidic, fresh, aromatic white varietals blend together to offer a balanced elegant white wine.
