Viticulture

Traditional dry farmed viticulture. Practicing organic gobelet (vaso) trained vines, cultivated completely by hand.

Soils

This southeastern corner of Spain is one of Earth's marble mining capitals - this is the result of the extremely high limestone content in the soils. The soils are of a sandy-gravelly texture with an high percentage of calcium carbonate and a high percentage of active calcium. The surface of the soils is littered with large blocks of solid calcium carbonate.

Climate

Semi-arid, Mediterranean-continental climate, characterized by low precipitation (less than 300 L per M2) and large diurnal shift (temperature changes between day and night).

Winemaking

Rigorous sorting is followed by gentle destemming. Following a pre-fermentative maceration, the whole berries ferment in open-top, 600L demi-muid barrels. Gentle press in vertical basket press for eight hours. Primary fermentation finishes, and malolactic fermentation begins in new French oak barrique.

Aging

The wine is aged for nine months in new French oak barrique, followed by three months in second use 500L barrels.

Nestled between incredible contrasting landscapes, we discovered the city of Abanilla, an oasis in the Murcian desert. Known in the eighth century as Favanella, the beautiful city. This is a landscape of juniper trees, pine trees, wild thyme and other Mediterranean herbs through which fly majestic golden eagles. The artwork on the label of Sylarion is ancient Iberian artwork of the typical golden eagle that can be found in this area.
